Peanut Butter Cup Cookies
Ingredients:
- Butter or Margarine, Softened 1 cup 250 mL
- Brown Sugar, Packed 1 cup 250 mL
- Granulated Sugar 1 cup 250 mL
- Eggs 2 2
- Smooth Peanut Butter (Kraft works best) 1 cup 250 mL
- All-purpose Flour 3 cups 750 mL
- Baking Soda 2 tsp. 10 mL
- Salt 1/4 tsp. 1 m
- Mini Peanut Butter Cups 60 60
Directions:
Cream butter and both sugars together. Beat in eggs, 1 at a time. Mix in peanut butter.
Stir in flour, baking soda and salt. Shape into small balls and place in greased mini-muffin tins. Bake in 350°F (175°C) oven for 8 minutes. As soon as the cookies are removed from the oven press unwrapped mini peanut butter cups into cookie. Let cool for approximately 5 minutes before you remove them from the mini muffin tray.
