Peanut Butter Cup Cookies

Peanut Butter Cup Cookies


Ingredients: 
  • Butter or Margarine, Softened                                1 cup      250 mL
  • Brown Sugar, Packed                                                   1 cup      250 mL
  • Granulated Sugar                                                          1 cup      250 mL
  • Eggs                                                                                     2             2
  • Smooth Peanut Butter (Kraft works best)          1 cup      250 mL
  • All-purpose Flour                                                         3 cups    750 mL
  • Baking Soda                                                                    2 tsp.      10 mL
  • Salt                                                                                     1/4 tsp.   1 m
  • Mini Peanut Butter Cups                                           60            60

Directions:

Cream butter and both sugars together. Beat in eggs, 1 at a time. Mix in peanut butter.

Stir in flour, baking soda and salt. Shape into small balls and place in greased mini-muffin tins. Bake in 350°F (175°C) oven for 8 minutes. As soon as the cookies are removed from the oven press unwrapped mini peanut butter cups into cookie. Let cool for approximately 5 minutes before you remove them from the mini muffin tray.
